Angel food cupcakes with whipped coconut icing!
These are some of my families favorite summer treats! Light and delicious these fabulous little treats are great with fresh summer berries! You can use any flavoring extract you want, but my family loves coconut and the toasted coconut on top is especially good!! You can also use this recipe to make a whole angel food cake smaller cakes as well. I love using the cupcake cups from simply baked, that we carry at Tallulahs, because you don't need a cupcake pan and the bright fun colors won't bleed or fade.
